Instructions
- Prepare the Ingredients: Rinse and chop the turnip greens. Dice the onion and carrots, then mince the garlic.
- Sauté the Aromatics: Heat olive oil in a large stockpot over medium heat. Add onions, garlic, and carrots, cooking for 3-4 minutes until fragrant.
- Add Broth and Seasonings: Pour in the vegetable broth and add the bay leaf, salt, and pepper. Bring to a simmer and cook for 10 minutes to develop flavors.
- Stir in the Turnip Greens: Add the chopped turnip greens and let them simmer for 10-15 minutes until tender.
