Ingredients

  • 1 lb ground chicken (90% lean recommended)  
  • ½ cup grated zucchini, squeezed dry  
  • 1 garlic clove, minced  
  • ¾ teaspoon kosher salt  
  • ½ teaspoon ground black pepper  
  • ¼ teaspoon onion powder  
  • ¼ teaspoon cayenne pepper (optional)  
  • 1½ tablespoons canola or coconut oil (for pan-frying)

Instructions

  • 1. Grate zucchini using a box grater and squeeze out moisture using a clean towel or paper towels.  
  • 2. In a mixing bowl, combine ground chicken, zucchini, garlic, salt, pepper, onion powder, and cayenne. Mix gently until just combined.  
  • 3. Divide mixture into 4–5 equal parts and shape into patties about ½-inch thick.  
  • 4. Heat oil in a non-stick skillet over medium heat. Add patties and cook 5–6 minutes per side until golden brown and internal temp reaches 165°F.  
  • 5. Remove from pan and rest for 2–3 minutes before serving warm in buns, bowls, or wraps.
