- 1 lb ground chicken (90% lean recommended)
- ½ cup grated zucchini, squeezed dry
- 1 garlic clove, minced
- ¾ teaspoon kosher salt
- ½ teaspoon ground black pepper
- ¼ teaspoon onion powder
- ¼ teaspoon cayenne pepper (optional)
- 1½ tablespoons canola or coconut oil (for pan-frying)
Instructions
- 1. Grate zucchini using a box grater and squeeze out moisture using a clean towel or paper towels.
- 2. In a mixing bowl, combine ground chicken, zucchini, garlic, salt, pepper, onion powder, and cayenne. Mix gently until just combined.
- 3. Divide mixture into 4–5 equal parts and shape into patties about ½-inch thick.
- 4. Heat oil in a non-stick skillet over medium heat. Add patties and cook 5–6 minutes per side until golden brown and internal temp reaches 165°F.
- 5. Remove from pan and rest for 2–3 minutes before serving warm in buns, bowls, or wraps.
