Description
A quick, no-bake treat with a perfect balance of sweet and salty flavors. Buttery Ritz crackers, creamy peanut butter, and rich chocolate make these cookies irresistible.
Ingredients
Scale
- 40 Ritz crackers
- 1/2 cup peanut butter (smooth or crunchy)
- 1 cup chocolate chips (semi-sweet or milk chocolate)
- 1 teaspoon coconut oil
- Sea salt (optional, for garnish)
Instructions
- Take one Ritz cracker and spread a generous layer of peanut butter on one side.
- Place another Ritz cracker on top, gently pressing down to create a sandwich. Repeat for all crackers.
- Melt the chocolate chips and coconut oil in a microwave-safe bowl in 30-second intervals, stirring between each, until smooth.
- Dip each sandwich into the melted chocolate, ensuring a full coat. Let excess chocolate drip off before placing on a parchment-lined tray.
- Sprinkle with sea salt if desired.
- Place the tray in the refrigerator for at least 10 minutes to allow the chocolate to harden.
- Enjoy chilled or at room temperature!
Notes
For a nut-free version, use sunflower seed butter or cookie butter.
Try adding a drizzle of white chocolate for a decorative touch.
