Ingredients
5–6 habanero peppers, coarsely chopped (remove seeds for milder heat)
2 cups pineapple, chopped
1 handful cilantro leaves, rinsed
Juice of 1 lime
1 cup white vinegar
½ teaspoon salt
Instructions
1. Coarsely chop habanero peppers and pineapple; rinse and chop cilantro leaves.
2. In a blender or food processor, combine habaneros, pineapple, cilantro, lime juice, vinegar, and salt. Blend until smooth.
3. Pour the blended mixture into a medium saucepan. Bring to a gentle simmer over medium heat, stirring occasionally.
4. Simmer for 5–10 minutes to allow the flavors to meld.
5. (Optional) Strain the sauce through a fine mesh strainer for a smoother texture.
6. Let the sauce cool slightly, then pour into sterilized glass bottles or jars.
7. Store in the refrigerator for up to 3 months and shake before each use.
