Instructions

  1. Prepare the Batter

    • In a mixing bowl, whisk eggs and granulated sugar until pale and frothy.

    • Add vanilla extract and lemon zest (if using) and mix gently.

    • In a separate bowl, sift together flour, baking powder, and salt.

    • Gradually fold the dry ingredients into the egg mixture without overmixing.

    • Stir in the melted butter and heavy cream until well combined.

  2. Chill the Batter

    • Cover the bowl with plastic wrap and refrigerate for at least 1 hour, or overnight for best results.

  3. Prepare for Baking

    • Preheat oven to 375°F (190°C).

    • Grease and lightly flour a madeleine pan.

  4. Bake the Madeleines
