Ingredients
1 cup all-purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
2 large eggs
2/3 cup granulated sugar
1/2 cup unsalted butter, melted and cooled
1/4 cup heavy cream
1 teaspoon vanilla extract
1 teaspoon lemon zest (optional)
Instructions
Prepare the Batter
In a mixing bowl, whisk eggs and granulated sugar until pale and frothy.
Add vanilla extract and lemon zest (if using) and mix gently.
In a separate bowl, sift together flour, baking powder, and salt.
Gradually fold the dry ingredients into the egg mixture without overmixing.
Stir in the melted butter and heavy cream until well combined.
Chill the Batter
Cover the bowl with plastic wrap and refrigerate for at least 1 hour, or overnight for best results.
Prepare for Baking
Preheat oven to 375°F (190°C).
Grease and lightly flour a madeleine pan.
Bake the Madeleines
Spoon or pipe the chilled batter into the molds, filling each about 3/4 full.
Bake for 10–12 minutes, until golden brown with a signature hump.
Let cool in the pan for 2 minutes, then transfer to a cooling rack.
Cool and Serve
Let the madeleines cool completely before serving.
Dust with powdered sugar if desired.
