- 6 to 8 garlic cloves, minced
- 2 sprigs fresh rosemary, chopped
- 2 sprigs fresh thyme, chopped
- ½ cup unsalted butter, softened
- 2 tablespoons olive oil
- 2 tablespoons kosher salt
- 1 tablespoon freshly ground black pepper
- 1 cup beef broth
- 1 tablespoon Dijon mustard

- Prepare the Roast: Take the prime rib out of the refrigerator one hour before cooking to bring it to room temperature. Pat it dry with paper towels.
- Preheat Oven: Set your oven to 250°F (120°C).
- Season the Roast: In a small bowl, mix minced garlic, Dijon mustard, salt, pepper, rosemary, and thyme. Rub olive oil over the roast, then apply the seasoning mix evenly.
- Sear for Flavor: Heat a Dutch oven over medium-high heat and add 2 tablespoons of olive oil. Sear the prime rib for 2-3 minutes per side until a deep brown crust forms.
- Slow Roast: Pour 1 cup of beef broth into the Dutch oven. Place the roast inside, cover with the lid, and transfer to the preheated oven.
- Cook Until Desired Temperature: Roast for about 2 hours, checking with a meat thermometer:
- 120°F (49°C) for medium-rare
- 130°F (54°C) for medium
- Rest the Meat: Remove the roast from the Dutch oven, tent loosely with foil, and let it rest for 20 minutes to allow the juices to redistribute.
- Slice & Serve: Carve into thick slices and serve warm with your favorite sides.

- For extra flavor, baste the roast with melted butter during the last 30 minutes of cooking.
