Ingredients
16 oz shredded cabbage (about 7 packed cups)
2 medium-small carrots, grated
2–3 scallions or 1 onion, thinly sliced
3 large eggs
4–5 tablespoons flour (all-purpose, gluten-free, or almond flour)
2 cloves garlic, minced or finely grated
1 teaspoon sea salt
½ teaspoon black pepper
½ teaspoon paprika (or smoked paprika)
½ teaspoon ground coriander (optional)
3–4 tablespoons ghee or high smoke-point oil (for frying)
Instructions
1. Wash and dry the cabbage, carrots, and scallions or onion. Thinly slice the cabbage and scallions; grate the carrots; mince the garlic.
2. In a large bowl, toss together cabbage, carrots, scallions, and garlic.
3. Add eggs, then scatter flour over the mixture. Season with salt, pepper, paprika, and ground coriander if using. Mix gently until combined.
4. Heat a non-stick skillet over medium-low heat and add a drizzle of ghee or oil.
5. Scoop small handfuls of the mixture, form into patties, and place in the skillet.
6. Fry for about 3 minutes per side until golden and crispy.
7. Transfer cooked fritters to a paper towel-lined plate to drain excess oil.
8. Serve warm with yogurt, dipping sauce, or alongside a salad.
