Ingredients

Scale

1 cup crystallized raw honey

1 cup liquid raw honey (clover, wildflower, or acacia preferred)

Instructions

1. In a mixing bowl, combine crystallized honey and liquid raw honey. Stir gently to blend.

2. Using a hand or stand mixer, whip the honey on medium speed for 15–30 minutes until it turns pale and creamy.

3. Spoon the whipped honey into a clean glass jar with a tight-fitting lid.

4. Let it rest in a cool, dark place (not the fridge) for about 7 days to allow it to set.

5. Once set, use and enjoy as a soft, spreadable natural sweetener.
