Description
This naturally sweet and creamy corn milk is a delicious dairy-free alternative. Packed with nutrients, it’s perfect as a warm or chilled drink, in smoothies, or with cereal.
Ingredients
2 cups fresh corn kernels (or frozen, thawed)
3 cups water
1 tablespoon sugar (optional, adjust to taste)
1 teaspoon vanilla extract
¼ teaspoon salt
Instructions
Prepare the Corn: If using fresh corn, remove kernels from the cob and rinse thoroughly. If using frozen corn, allow it to thaw.
Blend the Corn: In a blender, combine corn and water. Blend on high speed for 1-2 minutes until smooth.
Strain the Mixture: Pour the blended mixture through a fine mesh strainer or cheesecloth into a bowl, pressing to extract as much liquid as possible. Discard or repurpose the remaining pulp.
Heat and Flavor: Transfer the strained liquid to a saucepan over low heat. Stir in sugar, vanilla extract, and salt. Heat gently for about 5 minutes, stirring continuously. Avoid boiling.
Serve and Enjoy: Pour into cups and serve warm, or chill in the refrigerator for at least an hour for a refreshing cold version.
Notes
For a richer texture, replace part of the water with coconut milk.
Add a pinch of cinnamon or nutmeg for extra warmth and depth of flavor.
Store in an airtight container in the refrigerator for up to 3 days. Shake before serving as natural separation may occur.
