For the Cheesecake Filling:
- 4 oz cream cheese, softened
- 2 tbsp granulated sugar
For the Cookie Dough:
- ½ cup butter, softened
- ½ cup granulated sugar
- ¼ cup brown sugar
- 1 large egg
- 1 tsp vanilla extract
- 1 ½ cups all-purpose flour
- 1 tsp baking powder
- 2 tsp cinnamon
For the Cinnamon-Sugar Coating:
- ¼ cup granulated sugar
- 1 tsp cinnamon
Instructions
- Prepare the Cheesecake Filling: In a small bowl, mix cream cheese and sugar until smooth. Drop small dollops onto a parchment-lined baking sheet and freeze for at least 30 minutes.
- Make the Cookie Dough: In a large bowl, cream together butter, granulated sugar, and brown sugar until fluffy. Mix in egg and vanilla extract. Gradually add flour, baking powder, and cinnamon, stirring until a soft dough forms. Refrigerate for 10 minutes if sticky.
- Assemble the Cookies: Scoop dough into balls, flatten slightly, and place a frozen cheesecake dollop in the center. Fold the dough around the filling and roll into a smooth ball.
- Coat in Cinnamon Sugar: Mix sugar and cinnamon in a small bowl. Roll each dough ball in the mixture to coat evenly.
- Bake: Preheat oven to 350°F (175°C). Place cookies on a parchment-lined baking sheet, leaving space for spreading. Bake for 12 minutes, until the edges are set and lightly golden. Let cool for a few minutes on the baking sheet before transferring to a wire rack.
- Serve & Enjoy: Let cookies cool completely before serving for the best cheesecake texture. Enjoy warm or chilled!
