For the Beef & Marinade:
- 1 lb beef (sirloin or flank steak), thinly sliced
- 2 tbsp soy sauce
- 1 tbsp cornstarch
- ½ tsp salt
- ¼ tsp black pepper
For the Stir-Fry:
- 2 tbsp cooking oil
- 1 onion, sliced
- 2 cloves garlic, minced
- 1 tsp ginger, minced
- 3 large tomatoes, diced
- 1 tsp sugar
- ½ cup water or broth
- 1 tsp cornstarch (optional, for thickening)
Instructions
- Marinate the Beef: In a bowl, combine sliced beef with soy sauce, cornstarch, salt, and pepper. Let it marinate for 10 minutes while prepping other ingredients.
- Prepare Ingredients: Dice tomatoes, slice onions, and mince garlic and ginger.
- Stir-Fry the Aromatics: Heat oil in a pan over medium-high heat. Add garlic, ginger, and onion. Stir-fry for 1 minute until fragrant.
- Cook the Beef: Add marinated beef to the pan and stir-fry for 3-4 minutes until browned but not overcooked. Remove from the pan and set aside.
- Make the Tomato Sauce: In the same pan, add tomatoes, sugar, and water/broth. Let simmer for 5 minutes until tomatoes break down into a rich sauce.
- Combine & Serve: Return the beef to the pan, stir to coat with sauce, and cook for 1 minute. If needed, mix 1 tsp cornstarch with 1 tbsp water and add to thicken the sauce. Serve warm over rice or noodles.
