Description

This quick and flavorful Beef and Pepper Rice Bowl is packed with tender beef, sautéed bell peppers, and a savory sauce served over warm rice. A perfect weeknight meal that’s easy to customize and ready in just 30 minutes!


Ingredients

  • 1 lb sirloin or flank steak, thinly sliced against the grain

  • 2 cups cooked white or brown rice

  • 1 cup bell peppers, thinly sliced (red, green, or yellow)

  • 1 small onion, diced

  • 2 cloves garlic, minced

  • 1 tsp fresh ginger, grated

  • 3 tbsp soy sauce

  • 1 tbsp hoisin sauce

  • 1 tbsp sesame oil

  • ½ tsp red pepper flakes (optional)

  • Salt & black pepper, to taste

  • 2 tbsp vegetable oil, divided (1 tbsp for beef, 1 tbsp for veggies)

  • 2 tbsp green onions, chopped (for garnish)

  • 1 tsp sesame seeds (optional, for garnish)


Instructions

  1. Prepare the Rice: Cook white or brown rice according to package instructions. Fluff and keep warm.

  2. Sauté the Beef: Heat 1 tbsp vegetable oil in a large skillet over medium-high heat. Add sliced beef in a single layer and cook undisturbed for 1–2 minutes. Flip and cook another 1–2 minutes until browned. Season with salt and pepper. Remove from the pan and set aside.

  3. Cook the Vegetables: In the same pan, add the remaining 1 tbsp vegetable oil. Sauté bell peppers and onions for 3–4 minutes until tender but slightly crisp. Stir in minced garlic and grated ginger, cooking for 30 seconds until fragrant.

  4. Make the Sauce: Reduce heat to medium-low. Pour in soy sauce, hoisin sauce, and sesame oil. Stir well and let simmer for 1–2 minutes to blend flavors.

  5. Combine Everything: Return the beef to the pan, tossing it with the sauce and vegetables. Stir for another 1–2 minutes until fully coated and heated through.

  6. Serve & Garnish: Divide rice into bowls, top with beef and pepper mixture, and garnish with green onions and sesame seeds.

Notes

Swap beef for chicken, shrimp, or tofu for variety.

Add extra spice with sriracha or chili crisp.

Use cauliflower rice for a low-carb version.
