- For the Crust:
- 1 1/2 cups graham cracker crumbs
- 1/4 cup melted butter
- 2 tablespoons sugar
- For the Cheesecake Filling:
- 16 oz cream cheese, softened
- 3/4 cup sugar
- 2 eggs
- 1 teaspoon vanilla extract
- For the Apple Layer:
- 2 cups diced apples (Granny Smith or Honeycrisp)
- 1/4 cup brown sugar
- 1 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1 tablespoon butter
- For the Crumble Topping:
- 1/2 cup oats
- 1/4 cup flour
- 1/4 cup brown sugar
- 1/4 cup melted butter
Instructions
- Preheat oven to 325°F (160°C).
- Make the Crust: Combine graham cracker crumbs, melted butter, and sugar. Press into the bottom of a springform pan. Chill while preparing the filling.
- Prepare the Cheesecake Filling: Beat cream cheese and sugar until smooth. Add eggs one at a time, then stir in vanilla. Pour over the crust.
- Cook the Apples: In a saucepan over medium heat, cook apples with brown sugar, cinnamon, nutmeg, and butter until soft. Spread over the cheesecake filling.
- Make the Crumble Topping: Mix oats, flour, brown sugar, and melted butter. Sprinkle over the apples.
- Bake: Place the cheesecake in the oven and bake for 50 minutes, until the center is slightly set.
- Cool & Chill: Let cool at room temperature, then refrigerate for at least 4 hours before serving.
Notes
For a crunchier crumble, bake it separately and add before serving.
Use room temperature cream cheese for a smoother texture.
Store leftovers in the fridge for up to 5 days or freeze for up to 3 months.
