Ingredients
- 1 medium onion, diced
- 3 tablespoons butter, divided
- 4 large russet potatoes, peeled and diced
- 1 cup heavy cream or whole milk
Instructions
- Sauté the Onions: In a large pot, melt 2 tablespoons of butter over medium heat. Add the diced onions and cook for 3-5 minutes until soft and translucent.
- Cook the Potatoes: Add the diced potatoes to the pot and pour in enough water to cover them. Bring to a boil, then reduce to a simmer. Cook for 15 minutes, or until the potatoes are fork-tender.
- Blend or Mash: For a chunkier soup, use a potato masher to lightly mash the potatoes. For a smoother soup, blend with an immersion blender or transfer to a blender in batches.
- Add Cream & Serve: Reduce heat to low, stir in the remaining 1 tablespoon of butter and 1 cup of heavy cream or milk. Season with salt and pepper to taste. Simmer for 2-3 minutes, then serve warm.
