- 1 package (20 oz) 15 bean soup mix
- 1 large onion, diced
- 2 carrots, chopped
- 2 celery stalks, chopped
- 3 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes
- 6 cups vegetable broth (or chicken broth)
- 1 tsp cumin
- 1 tsp smoked paprika
- 1 bay leaf
- Salt and pepper, to taste
- 1 tbsp lemon juice
Optional Add-Ins:
- 1 cup cooked shredded turkey (for extra protein)
- 1 cup sliced plant-based sausage (for a vegetarian protein boost)
Instructions
- Rinse and (Optional) Soak Beans: Rinse the 15 bean mix under cold water. If time allows, soak overnight for even cooking.
- Prepare Vegetables: Dice the onion, carrots, and celery. Mince the garlic.
- Load the Slow Cooker: Add beans, vegetables, garlic, broth, cumin, smoked paprika, bay leaf, salt, and pepper to the crock pot. Stir to combine.
- Slow Cook: Cover and cook on low for 8 hours, stirring occasionally if possible.
- Add Tomatoes & Lemon Juice: Stir in diced tomatoes and lemon juice 30 minutes before the soup is done.
- Add Protein (Optional): If using shredded turkey or plant-based sausage, add during the last 15 minutes of cooking.
- Serve & Enjoy: Remove the bay leaf, adjust seasoning, and serve warm with crusty bread or salad.
Notes
- No time to soak beans? You can skip soaking, but beans may take slightly longer to soften.
- For a thicker soup, mash some beans or add a cornstarch slurry.
- Want a spicier kick? Add cayenne pepper, chili flakes, or jalapeños.
